Shred about a pound of cheese (recommended: a mix of Emmenthaler and Gruyere. Something swiss-ish) and shake it with 2 Tbsp of cornstarch or flour to coat.

Heat up a cup of dry white wine on the stove. Add a little garlic or nutmeg or mustard or lemon or flavored brandy if it suits your fancy. Add the cheese slowly, stirring constantly, until it is all melted. Don 't turn the heat up too hot or let clumps form. Transfer into a ceramic dish and set it over candles to serve.

Eat with cubed bread. Other things you might like to dip in cheese fondue: grapes, broccoli
