Chocolate Guinness Cake

bake at 350 degrees
use buttered spring form pan lined with parchment paper
1 9 inch cake, 12 servings
prep time, 15 minutes, plus 45 minutes baking
- 1 c. guinness
- 10 Tbsp. butter
- 3/4 c. unsweetened cocoa
- 2 c. confectioners sugar
- 3/4 c. sourcream (or yogurt)
- 2 large eggs
- 1 Tbsp. vanilla extract
- 2 c. all purpose flour
- 2.5 tsp. baking soda
topping (optional)
- 1 1/4 c. confectioners sugar
- 8 oz. cream cheese at room temperature
- 1/2 c. heavy cream
- combine guiness and butter in saucepan over medium heat until butter melts.
- remove from heat and whisk cocoa and sugar until sugar dissolves
- combine eggs, vanilla, sour cream in a small bowl.
- Add these ingredients to guiness
- Add flour and baking soda, and whisk until smooth
- Pour into pan (buttered and parchment papered) and bake until risen and firm, 45mins-1 hour
