Gnocchi

  • 3 lbs potato (about 6c mashed)
  • 2 c flour
  • 1 extra large egg
  • 1/2 c oil
  • a pinch of salt

boil (about half an hour) and mash the potatoes, and then mix in everything else. Ideally, roll the dough out into long thin cylinders and cut them up into gnocchi-sized pieces. (otherwise just drop the dough by spoonfuls). Drop into boiling water until they float.
