Laksa

The laksa paste
- 1 onion finely chopped
- 1 tbsp ginger
- 1 tbsp galangal
- 2 cloves garlic
- 2 stalks lemongrass
- 6 dried chillies (soaked & chopped)
- 4 candlenuts or macadamias, crushed
- 1 tbsp shrimp paste
- 6 laksa leaves (vietnamese mint)
- 1 tsp tumeric
- 1 tsp ground corriander
- 1 tsp paprika
- 1 tsp cumin
The laksa itself
- 2 tbsp vegetable oil
- 1 batch paste
- 1.5 litres stock
- 2 tsp palm sugar
- 1 tsp salt
- 2 cups coconut milk
- 300g fresh nice noodles
- or 200g hokkien and 100g vermicelli
- vegetables bamboo shoorts, bean sprouts, etc.
Heat the oil and fry paste. Add stock, sugar and salt. Boil. Reduce heat and add coconut milk. Cook noodles (boil or cover with hot water, depending on what sort of noodles you have) and serve with soup and vegetables
