Vegan chocolate pecan brownies

  • 1c. soft tofu
  • 1 c. dry sweetner
  • 2 tsp. vanilla
  • 4 Tbs. oil
  • 4 TBs. cocoa powder
  • 1 1/3 c. whole-wheat pastry flour
  • 2 tsp baking powder
  • 3/4 c. pecans, chopped
  1. preheat to 350. bake pecans ~ 10 minutes until they start smelling good
  2. blend/food process tofu through cocoa until smooth and creamy
  3. large bowl, sift flower and powder
  4. add pecans and tofu to flour, mix until "just mixed" add water if too dry
  5. oiled pan, 8X8, bake 20-25 minutes
  6. test with a knife to see if done.
